So, is it better to work for a chef-owner, who is connected intimately with P&L, in the kitchen daily, and can convey top-line v bottom- line numbers (hopefully) in a comprehensive manner to staff? Curious in a general sense about restaurant management in a variety of situations.

The former mayor of San Diego, Rodger Hedgecock, began a radio career and opened a restaurant in the revitalized "Gaslamp District".
The restaurant did not last too long and I remember his take on owning a restaurant,
"Want to make a small fortune? Start with a large fortune and then open a restaurant."
I suppose he could have used someone like you to avoid that fate.
